Hi Ruthie, Love your Juliet Dahlia-gorgeously vibrant. I had some spare Dahlia roots that I’d dug up and after a few not-so-tasty experiments, found Jame’s Wong’s rosti recipes (grate roots, squeeze out liquid, mix with flour and fry). Quite bland, but a lovely texture and a perfect accompaniment for smoke salmon an sour cream.
That sounds good! I do admire your willingness to experiment – not sure I’d be prepared to risk disappointment after all the work involved. The rosti recipe is a good one for all sorts of roots – thank you.
